Which fields can I edit?

The eight standard document information fields: title, author, subject, keywords, creator, producer, creation date and modification date. Each can be changed, cleared, or left exactly as it is.

Will editing change my modification date?

Only if you ask it to. Many PDF tools silently restamp the modification date and the producer with their own name; this tool preserves both unless you explicitly choose to update them.
